This recipe is quick, easy, and delicious. Enjoy it guilt free when you choose a healthier tortilla. Also let’s be real, we should enjoy all of our food guilt free. Choose real food, that is real good, and fuel your body!
Large Burrito Tortillas
½ Red Onion, diced
1 Red Pepper, diced
Small Rotisserie Chicken
3 Cloves Garlic, pressed
8 oz Shredded Mozzarella Cheese
1 tsp Olive Oil
½ TBL Grass Feed Butter
Salt and Pepper to taste
A Good Fresh Salsa
Dice up the meat from your rotisserie chicken and set aside. If you have a larger chicken, I suggest freezing half the meat and using it for making soup another day.
In a large pan heat up the olive oil and add the red onion, pepper, and garlic. Cook stirring often, until vegetables begin to soften. Add the chicken and lightly salt and pepper to taste. Stir and cook together for about 2-3 minutes then remove from heat.
On one half of the tortilla, lightly sprinkle cheese, top with the chicken mixture and another light sprinkle of cheese. Fold the empty side of the tortilla over the top. Repeat until all your chicken mixture is used.
In a large pan melt a tiny bit of butter over medium heat. Cook one tortilla at a time, they cook quickly. Add the filled tortilla to the pan for about 1 minuet, or until lightly browned, about 30-45 seconds. Flip over and brown the other side. Remove from the pan and place on a large cutting board. Repeat, melting just a very tiny bit of butter in the pan at the beginning for each tortilla.
Once done, cut each tortilla into three equal size triangles. Serve on an Off Your Rocker Pottery plate with salsa. Enjoy!!!
