This is my go to lunch just about every day. I eat mine out of a Off Your Rocker Pottery serving bowl, it's a big salad. I keep thinking I will get burned out on this lunch someday but I have been eating it for years now and still look forward to it every lunchtime. Feel free to substitute a few different vegetables, meats, or nuts and seeds to your liking.
Dressing:
1 tsp sugar
1/4 tsp Italian Seasoning
1/8 tsp Black Pepper
3/4 cup Olive Oil
3/4 cup Balsamic Vinegar
Put all ingredients into a salad shaker and shake well. Make sure you shake very well before every use as the oil and vinegar separate quickly. Do not refrigerate.
Salad:
Romaine- full head cut up
Shredded Carrots
Red Pepper diced
Red Cabbage diced
Cucumber sliced and cut in halves
Chicken (Grilled, leftover, rotisserie or what ever you like)
Raw Organic Shelled Pumpkin Seeds (I get mine from Costco)
Avocado diced (optional, I will usually use avocado in place of the chicken sometimes)
Place cut romaine in a large colander and rinse. Rinse after it is cut, I find it is easier to get all the leaves clean and helps the salad keep longer in your refrigerator. Add carrots, pepper, cabbage, and cucumber and mix well. Place your desired serving size in an Off Your Rocker Pottery bowl and the rest in a gallon size Ziploc in the refrigerator. I find this mix will keep for 3 to 4 days.
Warm chicken in microwave and add to bowl with pumpkin seeds and avocado, if using.
Shake dressing very well and add to bowl, toss everything together and devour. Oh, I mean enjoy!
