I so love a good corned beef and cabbage, but I can’t be the only one who has leftovers of the vegetables, but none of the beef.
So, what do you do with all these delicious vegetables?
The answer is something called Bubble and Squeak. Yes, I know, what kind of name is that?!?! Apparently one that is British. This seems to be popular in Britain, and we thank you Britain for this fabulous idea!
Ok, so here’s the deal, this can be done with many left over vegetables. The key I found is to have either a cabbage or Brussel sprout, with potatoes and any other vegetables.
You can make this two different ways. If your vegetables are drier, and not boiled in a broth, you can fry them up into a pancake like form. If your vegetables were boiled, like mine, and have a lot of moisture you simply fry them up into a more hash like substance.
Ingredients:
Leftover vegetables- things like potatoes, carrots, cabbage, Brussel sprouts.
Butter
Directions:
Dice up your leftover vegetables into very small pieces.
In a frying pan melt a small amount of butter, add vegetables.
If vegetables are “dry” press and form into a pancake like form. Flipping and frying both sides.
If they are “wet” and have been boiled stir them up until the fried into a beautiful golden brown.
Serve as a side, or a veggie meal, and as always, they are best served on handmade dinnerware from Off Your Rocker Pottery.
