Asian Cilantro Chicken

This meal is so good, so easy, and a year round favorite in my home. If you haven’t noticed I am a carb junky, so almost all of my recipes include carbohydrates. If you are on a no carb or low carb diet, feel free to eliminate them. One of the many great things about this meal is the way it is served with the cabbage; you can use the cabbage to decrees or eliminate the amount of rice you have. I personally still like the rice. I found if I try to have a no carbohydrate dinner, I will later end up snacking on more calories and junk then if I were to just allow myself the rice to begin with. It is easy to share this recipe with your friends and family on all your favorite social media with just a click below. 

Asian Cilantro Chicken Recipe

Ingredients:

2 tsp Olive or Sesame Oil

1 lb Uncooked Chicken Diced into 1 inch pieces

Large Onion

¾ cup Peanuts, plain

3 TBL Soy Sauce – low sodium

2 TBL Rice Vinegar

3 tsp Sesame Oil

1 Large Bunch Cilantro

White Cabbage - about ¼ head of cabbage

Red Cabbage – about ¼ head of cabbage

3 Cups Cooked White Rice

Directions:

Cook rice according to package directions.

In a Small Off Your Rocker Pottery Bowl mix together the soy sauce, rice vinegar, and 3 tsp sesame oil; set aside.

Chop cilantro and place in a Small OYRP Bowl.

Dice up both cabbages and toss together into a Large OYRP Bowl.

Dice onion and place in a Medium OYRP Bowl.

In a large wok heat 2 tsp of olive or sesame oil over medium to high heat. Add chicken and diced onions, cook for about 5-7 minuets or until chicken is almost done, stirring regularly. Add peanuts to the wok and cook for about 4 minuets. Add the soy sauce mixture and bring to a boil, reduce heat a simmer for 2-3 more minuets. Remove from heat and stir in cilantro.

On an OYRP Dinner Plate lay down a bed or rice, top with cabbage mixture, and then top with chicken and cilantro mixture. Enjoy!
