Beef and Sweet Potato Pie

This is comfort food at its best! I am going to be honest this is not the most photogenic meal, but it is so delicious and satisfying. Try it, you will not be disappointed!

Beef and Sweet Potato Pie Recipe

Ingredients:

4 Cloves Garlic, minced

2 Cups Diced Celery

2 Cups Diced Carrots

1 Large Onion, diced

2 TBL Grass Feed Butter –divided

2 Medium Sweet Potatoes

1 LB Ground Beef

4 TBL Flour

2 Cup Beef Broth

4 tsp Worcestershire Sauce

Directions:

Preheat oven to 375F.

Mince the garlic and dice the celery, carrots, and onions and set aside in an Off Your Rocker Pottery Large Bowl. Thinly slice the sweet potatoes and place in a pot, cover with water and bring to a boil. Cook the potatoes until they begin to soften. Once softened, drain and rinse with cold water, set aside.

Meanwhile in a large deep oven safe pot melt only ½ TBL of your butter. Add your vegetable mixture to the pot, cook and stir until the vegetables begin to soften, about 7-10 minutes. Add ground beef to the pot, cook and stir until beef is fully browned. Sprinkle mixture with flour and stir to fully incorporate. Add beef broth and Worcestershire sauce stirring and scrapping up any brown bits from the bottom of the pot. Cook and stir for 2-4 minutes or until the sauce has thickened. Remove pot from heat.

In a Small Bowl from Off Your Rocker Pottery melt the remaining 1 ½ TBL butter in the microwave, removing and stirring often. Carefully cover your meat and vegetable mixture in your pot in a single layer of potatoes slices – overlapping the edges. Brush the melted butter over the potatoes slices and place the pot in the center of your oven. Bake for 30 minutes. Then turn the broiler on high and cook for an additional 3-5 minutes or until the potatoes are golden brown.

Serve your potatoe pie in an Off Your Rocker Pottery Individual Flat Bowl and enjoy!
