This is the perfect meal to prepare in the morning and come home to later on. One bowl will fill both your soul and tummy!
Ingredients:
2 Large Chicken Breasts
2 Medium Sweet Potatoes, diced small
2 Cups of Diced Carrots
2 Stalks of Celery, diced
4 Green Onions, diced
½ tsp Dried Sage
¼ tsp Salt
¼ tsp Black Pepper
32oz Chicken Stock
1 Cup Water
16oz Gnocchi
¼ Cup Cold Water
2 TBL Cornstarch
Directions:
In a large Crock-pot / slow cooker place the chicken at the bottom. Top with sweet potatoes, carrots, celery, green onions, sage, salt, and black pepper. Pour chicken stock and 1 cup water over the top of the mixture.
Cover and cook on low for 6 hours or on high for 4 hours.
Using tongs remove chicken from the crock-pot – set aside to cool down a bit. Turn the heat to high and stir in the gnocchi.
In a small Off Your Rocker Pottery Bowl whisk together cornstarch and 1/4 cup cold water.
Chop up the chicken into small bite size pieces. Add the cornstarch and chicken to the crock-pot. Cover and cook for about 20 minuets or until gnocchi is done.
