Here is another quick and delicious meal you will want in your dinner lineup. It is a favorite in my house, and best of all, if you happen to be any leftovers; they freeze wonderfully for dinner another time.
Ingredients:
3 cups White Rice
1 ½ - 2 lbs Ground Beef
4 cloves Garlic, minced
1 Red Onion
1 ½ cups Shredded Carrots
2 tsp Cumin
2 tsp Ground Coriander
2 Oranges
4 TBL Soy Sauce
Salt and Pepper to taste
Directions:
Cook rice according to package directions. Mince garlic, and slice the red onion into thin small strips, place both in a medium bowl from Off Your Rocker Pottery.
Juice the two oranges into a small bowl from OYRP.
Heat a wok or large frying pan over medium to high heat. Add the beef then cook and stir until evenly browned. Add the shredded carrots, red onion, garlic, cumin, and coriander to the wok and stir-fry for 6-8 minuets.
Add the juice from the oranges and soy sauce and stir well. Reduce heat to bring mixture down to a simmer, cover and cook for 10-15 minuets or until carrots are desired doneness. If you wish you can season with salt and pepper.
On a dinner plate from Off Your Rocker Pottery lay down a bed of rice, top with beef mixture and enjoy!
