Chicken With Roasted Kale

Hearty and Healthy Recipes

Have someone you want to impress, or just want to impress yourself? This meal is sure to do the trick, it's pretty straight forward and impressive. The sweet juicy tomatoes combined with the kale, couscous and chicken is sure to please any pallet.

Serves 4

Ingredients:

Couscous (your favorite brand)

8-10 Plum Tomatoes

2-3 TBL olive oil

1/2 cup Basil chopped

Dash of Black Pepper and Salt

1 large bunch of Kale

3 TBL olive oil

1/2 cup Bread Crumbs

1/2 tsp Italian Seasonings

1 egg beaten

4 Chicken Breasts boneless skinless

1TBL Butter

 

Directions:

Preheat oven to 425F

Cook couscous according to package directions. Meanwhile cut tomatoes into medium sized slices. Finley chop basil. Place a piece of parchment paper flat onto a baking sheet, spread tomatoes out on paper. Lightly brush tomatoes with olive oil, lightly sprinkle with salt and pepper to taste and evenly sprinkle basil on top. Set aside.

Cut kale into thin strips, toss in a XL Off Your Rocker Pottery bowl with 3TBL of olive oil. Spread evenly onto a second baking sheet.

Place both tomatoes and kale in oven. Roast for 20-25 min or until tomatoes are hot and juicy and kale starts to char on edges. (I prefer mine slightly more charred some prefer less, cook to your taste)

Meanwhile if chicken breasts are thick butterfly them in half so they cook more quickly and evenly. Beat one egg into a small / individual sized Off Your Rocker Pottery flat bowl. In a second OYRP flat bowl combine bread crumbs and Italian seasonings. Pat chicken dry with a paper towel (this will help the breading stay on the chicken). One at a time dredge chicken in egg and then into bread crumb mixture.

Heat a non-stick skillet over medium-high heat, add 1/2TBL butter. Add chicken turning heat to medium and cover. Check chicken and turn after 5-8 minuets. When you flip the chicken add the last half of butter and melt under the chicken. Cook chicken until internal temperature is at least 165F

On an Off Your Rocker Pottery plate lay down a bed of couscous, top with roasted kale, then a layer of roasted tomatoes and the chicken on top. And their you have it an impressive dinner, looks amazing, tastes wonderful and is packed with healthy and hearty goodness.
