Omelet Pie

Hearty and Healthy Recipes

Some people may call this a frittata, but for those like myself who are trying to get small children to eat healthily this is certainly a pie. I thought what better way to start out the first recipe of the New Year but with the first meal of the day.

When I make this I cut it into eight pieces after it cools. I then put it in a sealed container layer with paper towels. The paper towels are key in keeping this omelet pie delicious all week long. I put a layer of paper towels on the bottom then a single layer of pie, and then more paper towels and a single layer of pie until all pieces are placed in the container. Make sure to then place one more layer of paper towel on top. The paper towels soak up the excess moisture keeping the eggs from getting soggy. This is my go to breakfast just about everyday. I make it up ahead of time and pair it with an apple. This delicious breakfast keeps me going all morning long straight to lunch.

Ham and Pepper Frittata

Ingredients:

1 Dozen Large Eggs

Ham or Turkey Deli Meat about 1/4 LB

1 Onion

1 Red or Green Pepper

Small pad of Butter

Salt and Pepper to taste

 

Directions:

Preheat oven to 425F. Dice up onion, pepper, and deli meat into small pieces and place in a large Off Your Rocker Pottery bowl.

Use a 12” cast iron skillet or an oven safe frying pan; I prefer the cast iron skillet. Heat pan on the stove over med-high heat. Melt a small pad of butter into pan and then add your onion and pepper mixture. Sauté until onion and meat are golden and peppers are softened.

Meanwhile using your same large OYRP bowl crack and add all 12 eggs. Whisk them and add salt and pepper to taste. Once the onion mixture is done remove from heat and add to the eggs in the bowl while you continue to stir. This step is important because if you add the eggs to the pan first they will immediately begin to cook in the hot pan and you will not get an even mixture. Once this is mixed add everything back into your skillet.

Place skillet in the oven and cook until golden brown and toothpick insert in the center comes out clean. Cook time is about 20-25 minuets.

Frittata

Once cooled cut into eight even slices and layer with paper towels in a container, see above. Keep in the refrigerator up to 10 days. When you are ready to enjoy place a delicious slice of pie on an OYRP snack/ salad plate and heat in the microwave for 45-75 seconds.
